Cycling the Rio Grande
The weather is so lovely in this season in Colorado.
The bugs that come with summer are not yet here, our creek and rivers are gushing with the melting snow and the birds are singing over the wildflowers.
We decided to enjoy the day cycling.
I made us a green juice to start the day. (lettuce, cucumbers, celery, lemon, apples and oranges.
We drove to Basalt where we usually start the bike trip.
We decided to do an easy trip as this is only our second cycling trip since last summer.
We cycled down the old Rio Grande bike trail situated on the foot of green mountains, rolling hills and pasture.
We admired the gorgeous homes built along the Roaring Fork river. Large ranches and luxury homes, some made with recycled wood and reclaimed materials.
They look so good in their locations, surrounded with creative gardens full of Tulips, lavenders and Poppies.
We stopped for some ice tea at Woody Creek where they set up a cooler filled with cold water especially for cyclist to fill their water bottles. Then we cycled back to Basalt.
We ended the day in Aspen with a lovely dinner at the vegetarian bistro above the Explorer book store.
We ate vegetarian meat-loaf with steamed kale, mash potatoes and a vegan mushroom gravy.
We also had a salad, a thai soup and vegan carrot and chocolate cakes for desert.
It is easy to remember why we love living here so much.
We saw so many people today with kayaks on their cars and along the rivers, so many people out on their bicycles, people playing enjoying the outdoors.
After a long time in rural NZ, where people value work instead of play, it is such a wonderful feeling to be around people that value their play time, prioritize it and do it often.
We feel less of an oddity here in outdoor heaven.
